If we only take up arms in defence of the earth where our immediate living conditions are threatened, we shall soon be sitting amidst the ruins of a barren planet. It is (unfortunately, some would say) not the case that when the trees die, man also dies immediately. There are no trees in the Mongolian steppes, but they are still not dead. The fact is, as an Indian chief once said: “After the deaths of plants and animals, you will die of the great loneliness in your hearts.” An appeal has been filed against this death sentence. This book contains a few passages from the defence counsel’s speech.”

Farmer & Stock-Breeder recently got the advisers, national and commercial, to talk over these matters with research workers and see whether any restatement of principles might be helpful to all concerned. The conference called for this purpose produced not only the many valuable papers in this book but the considerable amount of constructive discussion and suggestions recorded here.”

Technical changes have been applied to the once simple matter of having herds of breeding cattle in some places and yards of fattening bullocks in others. Sometimes they were on the same farm, but often there was a considerable distance between them and this was bridged by the cattle dealer and the store market. New concepts of breeding by artificial insemination led to the replacement of some dual-purpose cattle by some others. The reds and the roans became black and white, or just black; and the buffs are now making an appearance. Physical and chemical methods of dehorning have jostled with genetic advances in polling. Competition between the churn stand and the calf pen in a period of falling milk prices led to early weaning in its various guises and to the greater use of milk substitutes and the earlier feeding of concentrates. When chemistry had advanced to a stage in which analyses of substances more complex than simple salts and minerals were made, it was found that there were many compounds that occurred in both animate and inanimate objects. In addition, there were compounds that appeared to be restricted in occurrence to living organisms. These compounds had in common the property of containing carbon. Since they were restricted to organic nature their study became known as organic chemistry, a term later broadened to include the study of all carbon compounds, including those synthesised in the laboratory. For some time it was held that organic compounds were not subject to the same laws as those governing the behaviour of inorganic compounds (« Dans la nature vivante, les elementes paraissent obeir a des lois tout autres que dans la nature inorganique », Berzelius, 1849)1. Most living organisms are mainly inorganic in composition. Though quantitatively important, the inorganic components are overshadowed both in complexity and variety by the organic components. Quantitatively, the most important groups of organic compounds are the proteins, fats, and carbohydrates. A recent analysis of a human body showed that inorganic constituents amounted to about 73 % of its weight (of which about 68 % was water), while about 13% was protein, about 12% fat, and about 1% carbohydrate.”
