An end must be put to the dominance of the right angle. Protection programmes for spacious areas of wilderness have one purpose, among others, namely to preserve the charm of untouched nature. Real-life magic! Magic, or rather cheap tricks — that is what our oh-so-en-lightened world thought of the healing knowledge of the jungle Indians for such a long time. Until, at the sight of the burning rain forests, they realised that the best pharmacy in the world was going up in flames.

The awareness of its utility should not be the rescuers’ sole motive, however. If we only take up arms in defence of the earth where our immediate living conditions are threatened, we shall soon be sitting amidst the ruins of a barren planet. It is (unfortunately, some would say) not the case that when the trees die, man also dies immediately. There are no trees in the Mongolian steppes, but they are still not dead. The fact is, as an Indian chief once said: “After the deaths of plants and animals, you will die of the great loneliness in your hearts.” An appeal has been filed against this death sentence. This book contains a few passages from the defence counsel’s speech.”

From the cover: “THE production of beef cattle is complex and is becoming increasingly so. Technical changes have been applied to the once simple matter of having herds of breeding cattle in some places and yards of fattening bullocks in others. Sometimes they were on the same farm, but often there was a considerable distance between them and this was bridged by the cattle dealer and the store market. New concepts of breeding by artificial insemination led to the replacement of some dual-purpose cattle by some others. Competition between the churn stand and the calf pen in a period of falling milk prices led to early weaning in its various guises and to the greater use of milk substitutes and the earlier feeding of concentrates. Multiple suckling, carefully supervised by expensive labour, has led to mass suckling with labour charges spread over more cattle. More recently there have been interesting developments with barley fed and battery beef with forage flowing untouched from silo to stock, a trickle of concentrates being fed on the way. From the cover: “When Trevor Hickman published the first history of Stilton cheese in 1995, he had spent over 30 years researching the manufacture of the ‘King of English Cheeses’. He has encountered much opposition from local politicians and cheese makers. They argued that Stilton cheese was never made in the village of Stilton in Huntingdonshire on the Roman road called Ermine Street, but was instead made around the district of Melton Mowbray. In this book the author has attempted to correct this. A blue-veined, pressed cream cheese was made in the town of Stilton by 1721, and it was called Stilton cheese.

A different type of cream cheese which developed blue veins was produced in the farm dairies in the village of Wymondham, Leicestershire, before 1600, and was marketed in the name of the producers. Frances Pawlett of Wymondham and Cooper Thornhill, an entrepreneur living in Stilton and trading into London, changed the manufacture and marketing of this world-famous cheese. Another influential individual, Shuckburgh Ashby, an entrepreneur with connections with the banking community in London, began dealing with Leicestershire cheese from Hinckley, Leicester and eventually Quenby Hall. This pressed cheese developed in the Sparkenhoe Hundred in Leicestershire, off the Roman roads known as the Fosse Way and Wading Street. The marketing of the pressed wheels of Leicestershire cheese brought many competitors. In the 1740s Ashby became aware of a new cheese that was being marketed in London, Stilton cheese, which was sold out of Cornhill, London, by Cooper Thornhill. After Thornhill’s death, Ashby controlled much of the Stilton cheese trade into London, which was by then being made at Quenby Hall.

The production of cheese in Leicestershire and the Midlands has developed and expanded over many centuries. In the 20th century cheese production came under the control of national Government, which stipulated that all blue-veined cream cheese must be produced from pasteurised milk. There was considerable opposition to these controls and protests surfaced again in 1989 when the Minister of Agriculture intended to ban the sale of unpasteurised cheese. The Specialist Cheesemakers’ Association was formed in opposition, with Randolph Hodgson as chairman. Nowadays a fine Leicestershire cheese is made near Hinckley and Stichelton cheese is made in Nottinghamshire from the original Stilton cheese recipe. Both are made from organic, unpasteurised milk.”

If I was interested, I should arrange an appointment to meet him in Plantation House, Mincing Lane.

So began Roy Moxham’s five-year sojourn in colonial Malawi, managing 500 acres of tea and 1,000-plus workforce. His presence there, at the very end of Empire, was not fortuitous: tea production had been started in Africa by the British, with seed sent out to missionaries by the Royal Botanical Garden, Edinburgh.

Moxham’s experiences led him to investigate the history of tea, a fascinating tale but one that reflects little credit on the British Empire. When tea first reached Europe and America from China in the 17th century, its high price restricted its use to the wealthy. Heavy taxes led to murderous smuggling and eventually to the notorious Boston Tea Party; while in China the British brutally imposed the opium trade to finance its tea dealings. Intrepid and eccentric British planters flocked to India, Ceylon and Africa, and a million workers were moved on to the plantations, bought, sold and stolen like slaves.

Today the British addiction is shared by many: tea is easily the world’s most popular drink whose wholesome image belies its violent past, entertainingly though chillingly recounted here by Roy Moxham.”
